The other night I was driving and saw a current shape S-Class with all these decals/stickers over the body and what looked like a camera attached to the roof (similar to those Google maps vehicles). Any ideas of what this could be? Surely not a Google car - they wouldn't be using S-Classes would they?

Interesting. Couldn't tell as it was too dark. This was after midnight I believe. Funny thing is, I saw it once, then about 10 minutes later (at a different spot) spotted it again!

Ok... I saw the same thing driving down the M5 Sydney bound just outside Menangle area only a few days ago.
It was park on the side of the road. Was going to ask the same question and here you are asking it for me. Yes, (older??) model large Merc, was white I think? Had a tall round cylinder standing up from the centre of the roof around 3 foot tall and 4 inches in diameter. Looked like a blue light near the top? Was totally smooth.
