Default 1970 V6 Capri MkI

My wife bought this car about 12 years ago (before we met) and she has had it at a workshop for 8 years while they 'did some work' on it.

We picked it up last week and I'm not happy to say the least. Anyway I've signed up to get some community knowledge and advice on fixing this car for her... and sadly yes it stays pink, I can't convince her otherwise.

1. I need to wire up the car, hardly anything works. So a wiring layout would be great so I can troubleshoot issues

2. The manifold is barely held together, are there replacement manifolds available on the market?

3. Dash will need to be removed, gauges do not work (except the speedo) so this relates to a wiring diagram

Also could someone please tell me what the two upper switches on the dash (see photo) are for and where can I purchase replacements?
