This may sound stupid but I have a 1998 Au XR6 and I am trying to change the rear break rotors bu the bearing hub appears to be stopping me, do I need to remove it?

i assume you haven't got the hand brake still on have you? these have pads inside the rear discs for the hand brake. if that's off, just give it a few taps with a hammer, it will come off without taking the hub off

solid axle or IRS have knock off discs. as said previously hand brake shoes can stop u from removing the discs, especially when the shoes have worn a lip on the inside of the disc in the drum. you may have to unadjust the handbrake also to remove it. second the discs sometimes seize onto the hub locator, a few gentle hit with a copper hammer or a regular hammer and a piece of wood will free it. a quick rub down with some emry paper will ease the reinstallation

they can be a real bugger to get off, both my cars had them rusted in place, had to dribble rust breaker in, clean up the central hub, and hit with a large hammer. the guys at Ford acknowledged they took some "gentle" persuasion to get off.
