they should get the car in first thing in the morrning (8am)
start on it when its a little cooler maybe 10 ish .. the head would be off even if a 2yr app was doing it by noon .
to pressure test and machine the head is a easy thing if you can do it inhouse and it would be done by 2pm .. while the head is getting machined you clean the block. blow it all out put it back together and if all well you will have it at about 5.
ring customer and tell them there car is ready the next day after you have checked and rechecked your work and the car is running find with no probs .
BUT that is in a perfect world .

if your mechanic is taking so long ask him why ?
if it is couse he over booked work then he should have told you it will be a few days . That is the right thing to do .
If it is couse he is waiting for the machine shop to finsh the cylinder head then as you see its not your mechanic foult but the machine shops. .. You could maybe ask them why are they takeing so long .

At my work We do the first part in and out in 2 days at the most . If you book it in for a head gasket . we time out 6hrs and that time is yours . get a car in and out thats how you make money .. The Place you took it to has a 500$ profit there just sitting there . If it was your shop would you want to finsh it so you could get payed . of corse you would so why dont they think the same .
Maybe They are just a bit slack ....
