As the title states.... do u have a suggestion for..
I bought a couple of Rainbow trout and a very Large snapper today to cook up.... Any suggestions on how to cook them and tips in what to add??? Cheers. :king:

Coat in butter, put some herbs and chilli flakes in the gut opening, wrap in foil, cook on barbie, prob around 5-10 mins each side

Dice up some capsicum, onion, garlic and tomato... stuff them with it...
Put some lemon, more of the stuffing etc around the fish... maybe add some other flavour adder, a sauce or something... and then whack it in the oven. Mmmmmm...

Lemon, butter and pepper and salt, wrapped in banana leaves, and cooked in hot coals for an hour or so. Absolutely the best way to cook fish.

I did the easy-dodgy way: I just went to the local fish and chip shop. A piece of flake, calamari rings and a couple of potato cakes (not scallops dammit!) all deeeeep fried.

"Lampuka" A Maltese fish dish.
This is best with Mackerel steaks, You will need: tomato paste, cappers, itallian herbs, finely diced onion and fresh garlic, capsican, black olives, some sugar, salt and pepper Set the oven to 180 deg, mix all the ingredients together to make a firm liquid sauce, lay the fish in a deep oven proof dish and cover with the sauce, place in the oven for 20-40 mins till the fish is cooked, (pending on what type of oven) serve with a spoon of jasmin rice with the fish on top of the rice, drisel the sauce over the top of the lot. And wallah there you have Lampuka. Also goes well with a garlic bread and a glass of red wine. Mick

trout, was cooked in alfoil, onion herbs tomato and a bit of chilli chopped....
Damn mouth watering... Having the large snapper tomorrow, gona try micks idea... cheers
