whats involved in putting a tacho dash into my ea crap dash.

This is not that hard .... even I can do it ;)

All you need is the new dash of cause ........ a Phillips Head screw driver ......... remove the screws that hold the dash in & then unplug the back of the dash & put in the new one ......

It depends on what your EA is ..... manual or auto ........

There's also the oil sender I think.

I haven't done this myself (I have a digital dash ) but do a search including the words "tacho" "oil" and "sender" and see what comes up.
