Default Engine temperature on start line

Hi Everyone,
I have a clevo n a Cortina which tends to get hot. My mechanical knowledge is limited and have been told that you should not launch the car when the motor is too hot. There have been times that I have been waiting in the staging lanes and the temperature creeps up. So far its been up to 195F.At what temperature should I pull over to the side and not go through with the run?
Cheers

grab some mates next time at track, push it in staging lanes, you generally dont more to far or too often until your line is ready to race. Then start drive into burnout and race. Maybe try leaving bonnet open/up while in the staging lanes, it all helps how much? how long is a piece of string?
