Its called thermal dynamics. Years ago, sitting around a fire pit the drunken bet was (i knew i would win this, so a safe bet) what would happen if i chucked a capped plastic bottle of water on the fire. My mate was adimant it would melt the plastic straight up. I won the bet. The fire just heated to water inside the bottle. Well untill we forgot about it and the superheated water decided the plastic was no match and more or less exploded. Point being i won the bet.

I have noticed this phenomenon also. It's on every electric kettle I've owned, and done the same experiment with other kettles to.

Ok, so I have just researched this, and the answer seems to be widely accepted..

"When it boils, steam is forced down a tube (sometimes concealed in the handle) to a bimetal strip in the switch that trips it off. That's why the lid has to be closed."

Wow, so now I (we) know.
